Fosil San Pablo Chardonnay 2021 offers crystalline citrus purity, with aromas of confit lemon, lime curd, and white peach. On the palate, it is taut and mineral-driven, combining mouthwatering acidity, chalky texture, saline notes and hints of green apple. The finish is long and expressive, showing creamy complexity from lees ageing, yet retaining a clean, energised profile reminiscent of fine Chablis.
