Peter Mertes take meticulous care in making their wines. Only the finest, fully ripe grapes were selected – essential in 2023 – where they are sorted and carefully broken up. Fermentation is carried out in temperature-controlled stainless-steel tanks to ensure the delicate aromas and balance are preserved. Once completed, the wine spends time on its lees to extract further character.Â
